I’ve got some travel plans in the near-immediate (like this coming weekend) future, which reminds that I’ve had this sweet little out post waiting in the wings from a trip of trips’ past. So today, I’d love to share.
Back during my maternity leave, I joined Kenny on a business trip in Boulder, Colorado. The weekend was truly “business” in that it was about spending time and getting to know his regional team members and their significant others. And while nearly all of our plans included rolling deep with a group of almost twenty, Kenny and I did steal away for a nice little brunch at Emmerson.
If familiar, Emmerson is located on Pearl Street, which is the main drag of Downtown Boulder. We actually just happened upon it, as I believe when we were there, it had only been open for a handful of months. Either way, it was totally up our alley.
Emmerson’s corner spot was spacious and brightly poppy. There were accents of pink and bright whites, and tons of cool clean tile patterns. We parked ourselves at the bar and treated ourselves to coffees and mimosas, eggs and waffles, and one seriously killer piece of avocado toast. The food was perfect, clearly top quality and creatively sharp, and the atmosphere was upscale without feeling obnoxious. Again, totally up our alley.
So if you happen to find yourself bopping around Downtown Boulder, definitely do yourself a favor and seek out Emmerson.
